Rhubarb is a beautiful fruit which has bitter, pungent, and astringent properties. It has a cooling effect on the body with a pungent post digestive effect, making it beneficial for pacifying pitta and kapha. It works on the plasma, blood, and fat tissues and extracts toxins out of the body.
Here is my rhubarb compote recipe. It is easy, delicious, and makes a beautiful breakfast or snack.
4 rhubarb stalks
Small piece of fresh ginger
4 cardamom pods
Half teaspoon maple syrup
2 tablespoons water
Grate the ginger, chop the rhubarb, and split the cardamom pods. Pop all ingredients into a saucepan & bring to boil then simmer for 15-20 mins. So simple, so healing, and beautiful served alone or with a dollop of coconut yogurt on the top. Always remember that food is the first medicine
